I believe the 2 keys too unlocking the best results for this recipe are to get the beer batter to the right thickness and having the oil hot enough. Get those 2 right and it's all over. Finally tried this style on some southpier grouper instead of the same old cornmeal deal. I guess I'll never be using cornmeal on grouper or any kind of good thick fish filet. Save the cornmeal for the panfish.

If in doubt, justa dash or two with Old Bay seasoning makes it all taste good. Mix that with you're Cornmeal next time...........

www.e-cookbooks.net/here is a good site if you like stuff from the restaurants. i like the cheese biscuits from red lobster. they are amazingly easy to make. it's under "the insider's recipes for brand name foods." send me a p.m. and i will e-mail it to you. it's in pdf format and it's a big file.
