I went Saturday night and caught a jack and a bunch of ladyfish on a DOA cal so decided to use a big chunk of the jack to try and catch a shark but catfish just shredded it and any chunk of lady fish I threw out any advice on how to avoid them?

Try a float and get it off the bottom.

Big Hooks and Big baits.
I use from 13/0 to 22/0 circle hooks. The bait should be at about 6 inches long. Bigger than a catch fish can swallow. They might chew at it but a decent size shark will swallow it in one go.

Keep in Mind, Sharks have large teeth. They can bite through just about any line and leader. You may want to purchase and use a minimum of a 40lb. Steel Leader.

I don't use steel wire, I've nothing wrong with it. 40lb wire might be a little light, but I have landed 5ft's on 30lb flurocarbon leader. I also keep a small spool of single strand wire in my tackle bag just in case.
I use 450lb Mono, double crimped, with marine heat shrink to cover the crimps with a 6 to 10oz barrel/egg sinker. It's way cheaper. (shameless plug, I sell them too). I normally make the shark rigs about 3 to 4ft long with a loop at the end with a loop thimbles, then use a 280lb click swivel.
Out toothy friends up to 8ft have never been able to bite through the mono and with the clip swivel it's easy to change out to a new leader. The shorter length leader has never been an issue either, makes it easier to cast too.

Reminds me of that quote from Quint in the movie Jaws...
