I made this quick, sweet and tasty breakfast today. I pan fried in coconut oil: mango snapper filet, banana slices (Skyjay take note), peach slices and pineapple chunks. It was like having a dessert breakfast. Took only 5-10 minutes to cook.

I pan sautéed some mangrove snapper with a little olive oil butter and Old Bay Seasoning tonight and made a pan sauce with pineapple tidbits, some mandarin orange sections and some of the natural juices they came in, a little reduced sodium soy sauce and a little reduced sodium chicken broth and thickened it with a cornstarch and water slurry. I served it with Publix steam in bag brown rice which I cooked on the stove with a little chicken broth instead of the microwave. I also served zucchini slices sautéed in olive oil and butter with garlic powder and an Italian seasoning blend McCormick grinder.
I did not take a picture but it was good. Seabird provided the mangrove snapper for the dinner and we all enjoyed it. Me, my Mother and Seabird.

Heck yea that has yumm all over it.. Now that i think about it, me and the wife unit we used to always eat bait before each trip.. Calimari,shrimp or any fish sammich.. kinda gotten away from that no wonder my fishing trips have sucked.. you got to be one with the bait to catch the big fish..
