I had an oven curry chicken recipe I sorta modified for macks. I'm generally a minimalist when it comes to fish and don't like curry much, but this one I like and thought it would go good with a stronger fish. 1 cup plain yogurt (I used Greek) 3 tsp curry powder Dash salt Tsp pepper 2 scallions sliced Juice of 1 lemon Blend it all together. Spoon and rub over filets. Cover and refrigerate 2 hours (chicken recipe says 2 hours to overnight*). Bake 350-400 for 15-20 minutes Broil for few minutes to darken. *My mistake was I marinated overnight. I would NOT go over 2 hours. It came out fairly well. Next time I'll try it not marinating it though. It's a rather lighter curry taste.

But don't let it marinate! Just slap it on and bake. For chicken marinate at least 2 hours but for the macks I'd been better off not. Just bake and maybe hit it under the broiler last minute or 2.

I think this would be better on a less oily, larger flake fish. Like a grouper or snapper, striper, redfish, etc. Going to have to try it. Oh, and 3 teaspoons? That's 1 tablespoon.

I'll stick to my minimalism on flakey fish. Salt, pepper, pat of butter thank you... If you do try it on those types of fish, I'd probably go lighter on the filets. I slathered my macks rather thickly. Do let us know how yours come out when you do make it. Eerppp! 3 tsp does = 1 Tbs...doh! D

Skywaypa: You have to try My Mackerel Recipe. My Mackerel does not taste Oily. Mackerel only tastes Oily with the Mudvein(Lateral Line)left in it. Take the Mudvein out and You will have the Best Tasting Mackerel You have ever tasted. Several People here on the Site will Testify to it. Perhaps I should have said "less fat content" instead of oily. I agree completely though... the center line isn't your friend. This is true on most if not all fish. Very few have no centerline at all... only one that comes to mind is flounder. I'll be happy to try your recipe also, next time I slay a few macks.
