have any of you guys ever fished cockroach bait if so what bait and rig is best for trout and redfish

Around Cockroach Bay and other grass flats and mangrove areas, I find tossing out free-lined greenbacks or shrimp works well if sight fishing (seeing the fish and casting the bait ahead of them), or toward the mangrove roots/overhangs works well for snook and reds. Same bait under a popping cork works well out on the flats if you can't find fish to cast too. The popping cork action/sound can pull fish to the bait, and if drifting you can cover a good bit of water. Also hooked up with some nice flounder this way.
If you don't have a boat, either style of fishing works well when wading, though I'd probably use the popping cork more for a little extra weight for casting distance, unless you're up close to the mangroves.

Haven't come across any trout out there recently. Seen schools of tailing reds on the flats, but that's about it. Haven't seen any bait around that area of the bay, most seems to be around the bridges. I imagine the trout, snook, jacks and others are probably around the bait near the bridge approaches/shallows. Fishing EG Simmons would be the same as Cockroach, as far as I've ever fished them. Pretty much the same as any other flat or tidal area. If you like using artificials, toss out a soft jerkbait and twitch it over the grass, pausing as it enters a sandy patch. Likely to get trout, reds and flounder.

Lots of good fishing out of EG Simmoms. Freeline shrimp, greenies, spoons, topdogs.... You have to do a bit of wading to get to the best spots, but worth it. Have caught trout, snapper, snook, reds there.

Quite a bit of current and sometimes very choppy. I have a 15' flats boat and between the two for that area I prefer walking out rather than fight the current/wake. Good luck. If you head out let us know how you did.
I camped there for 2 weeks a while back, walked the sand flats at night with a light and saw some nice flounder. Didnt have a gig at the time but might be another species to target out of the flats with some lives or jigs.
