Finally kept a small blacktip. Absolutely great taste. Have steaks, fillets, and nuggets. Didn't soak it, just bled & gutted and was filleted within 2 hours of catching it. Grilled spicy shark on yellow rice

I have been trying to get those results for a while now. I caught a bonnet head and did everything correctly as far as killing, bleeding, gutting and on ice right away. The shark itself stunk so bad of ammonia/urine that I couldn't even open the cooler without stinking up the house. I soaked the fillets in milk over night and even after that, I could still smell it a little bit while cooking. Now, I say this because I am sure not EVERY shark smells this bad right? I am eager to catch a blacktip or something similar for comparison, it just doesn't seem right for it to have an unbearable smell as this one had... That picture looks delicious!

I have caught and eaten both blacktip and bonnets, blacktip is better. I did not have the issue with stink like you did. I bleed them right away, filet or steak right away, wash the meat thoroughly and then put in ice in cooler. I have not used milk but simply kept meat cold. One time I soaked the meat in vinegar and oil dressing.

You shark eaters are an odd lot....come by my house before dark and I'll throw a big bag of snook fingers in some boiling peanut oil, just got a box of big gulf shrimp I'll skewer on the grill for an appetizer, grill some sweet corn, pop a keg and we'll eat the good stuff

I had shark for the first time last week, it was an Atlantic sharpnose. I bled and gutted it the moment I caught it, no blood or urine smell whatsoever. Tasted pretty darn good!

Too much work!!! I did a blacktip last year, bleed and gut right away, iced, soaked in milk, then marinated in Italian dressing and grilled. It was pretty damn good, shared with my neighbor who also thought it was really good. Just too much damn work!!! If you see me catch a shark on the pier, it’s all yours, just ask before I throw it back over the rail!!!

I like shark. I've gotten a few out on one of the Critter Fleet boats. Gut and ice immediately helps the stink. I once cooked up a batch on the grill with spicy sauce, and it makes me hungry just thinking about it!

The shark itself stunk so bad of ammonia/urine Something was up with the shark you caught. If you did all the prep work, it should have been ok. I've kept bonnethead and it reminds me of a bigger channel catfish, not bad but a little tough with a stronger flavor. Blacktip was definitely better. Did you happen to fight your shark for very long? Longer fights can make any fish taste bad. The really strong ammonia smell seems odd unless it stressed out and tried to 'purge' itself.

Thanks for the advice guys, It looks like the shark I caught was just over stressed or soiled itself badly. I mean I still smell the ghostly piss smell in the air.... Hopefully I have better luck next time!

I've had the same experience: I've caught blacktip and cooked it up and it was great. Caught another a few years later, handled the same way and it stunk. I haven't caught a sharpnose or bonnethead, next time I do, I will try it.

Only shark i have ever liked is Spiny dogfish. I have tried blacktip ,we caught a 6 ft'r a few years back, pulled it up the gunnel laid it open, ripped all the guts out packed it on ice... I soaked it in milk, then italian dressg, then on the grill.. smelled like i was cooking a porto potty after a week in the sun and being used every 10 minutes... NASTY.. Tried sharpnose.. same way, nasty nasty. Now i just try to give em a kiss, and release.

Caught a blacktip from the SSP and tried it a couple different ways. Fried, grilled, even sauteed and it was all good. I think sharks are like black drum or redfish in the way that the smaller they are the better they taste. I would keep one that just meets the legal size limit but I would release a 6-8 footer. I hear spinner shark is great too
