This post no doubt may raise some controversy but here goes: Went fishing Thursday and Friday mornings (between 7-9) to catch some catfish (the hard head type). My wife has urged me to catch some as she loves catfish. I told her that salt water cats are not the same as fresh water. I was also skeptical as the water is very warm...89 F and I was fishing shallow water. Thought they might taste weedy or muddy. Got a total of 3 catfish, a whiting and a couple of pinfish. We also supplemented our fish dinner tonight with some store bought whiting in case the catfish tasted bad. She pan fried the breaded fish and we both were pleasantly surprised. The catfish was mild and tasted good...no off taste at all. Per her recommendation, I steaked the catfish and left the skin on. The skin tasted like the rest of the meat with no off or odd taste. The only thing she wants next time is bigger catfish! My wife maybe a new fisherman, but she does know her fish. The guys who run the bait house encouraged me to catch all I can. One of them says the catfish steal food that otherwise would attract red fish. Met another guy fishing there for blue crabs...he had a couple of nice ones today.

Very unusual way to prepare them for cooking. I have heard of steaking Kingfish and maybe another fish or two but NEVER catfish.

Re the catfish eating all the bait for the red fish. So what! Red fish are closed for keeping legal size fish and within bag limits until next year due the red tide last year.

The baithouse man may be thinking of the longer term for the redfish. If they are not finding bait and other food in an area, they will move on. It can't hurt to build good relations with people there.

As I thought, the catfish was going to be ok. Maybe not the best, but hardly the bad reputation it gets. Did you tell the difference between the hardhead and sailcat.

I had sail cat long time ago. Not sure of the taste difference between the types of catfish. Many people say that sail cats are better. But after this dinner, I say that the hard head catfish has gotten a bad rap.

I tried sailcat long ago myself, but I thought it tasted muddy.
